This is literally one of the best recipes I’ve ever put together and I haven’t stopped making it since, because it’s really that good. I meal prep it for the whole week, and honestly, it tastes even better the longer it sits in the fridge. • Low-calorie, high-protein yogurt (Walmart) • Protein granola (Costco find and one of my faves) • 2 tbsp chia seeds • A drizzle of honey • unsweetened almond milk It comes out to 45g of protein and 350 calories for one serving. Easiest 45g of protein you’ll ever get and it actually tastes good. Meal prep days are my favorite because they are a great start to a week!✨ DANIMALS AT-HOME SMOOTHIE Ingredients: • 1 cup of Greek yogurt • 1/2 teaspoon Vanilla Extract • 1/2 cup of milk • 1/2 cup of fruit SNICKERS CRUNCH CUPS Ingredients: • 4-5 plain rice cakes, crumbled • 1/2 cup natural peanut butter • 1/4 cup raw honey or maple syrup • 1/2 tsp vanilla extract • 1/2 cup dark chocolate chips, melted Instructions: Combine everything together, then press into a silicone muffin tin and lightly drizzle with melted dark chocolate. I guess the tip here is just leftovers? Cook an extra recipe or just double up on whatever you’re making! Sometimes I’ll also make pasta or meal components (rice, beans) so the next day is easier. The days my husband picks up our kids are usually my cooking days. And then the days he’s in the office and I’m solo I just have to reheat and serve - so much easier when you’re this outnumbered 🙃 For picking the recipes obviously some things keep better than others so I always keep that in mind for what we eat first. I have tried true meal prepping before but I just don’t want to give up several hours on a weekend to do that - it’s our family time that we already get so little of. ✨ Freezer Meal Prep ✨ Do you do it? I haven’t done it in ages, but I’ve got back into the habit of it & it’s been great for Kyle to grab meals out for lunches & not have to worry if we have enough leftovers. Here’s one of my all time fave freezer friendly recipes (and you guys love it too!)👇🏼 Chorizo & bacon risotto! - 300g Arborio rice - 2 vege or chicken stock cubes - 5 cups of water - 2 chorizo sticks diced - 5 slices of bacon diced - 1 brown or red onion diced - 2 cloves of garlic diced - 2 cups roast pumpkin diced - 1 cup spinach roughly chopped - 1/2 cup Parmesan - 1 tablespoon Tuscan seasoning Method: - Cook onion & garlic in a large pot until softened - Add your Arborio rice & Tuscan seasoning, stirring until rice is well coated - Add stock cubes & 5 cups of water - Simmer for 20 minutes, stirring occasionally to ensure it doesn’t stick to the bottom - While the rice is cooking, roast your pumpkin & cook your chorizo & bacon - Once rice is almost cooked, stir through pumpkin, bacon, chorizo, parmesan & spinach (you can mash the pumpkin a little if you don’t want chunks) - Continue cooking until all liquid has been absorbed & enjoy!
