Creamy miso noodle soup with tofu walnut crumb 🍜 Makes 1 large/2 small noodle soup/s *Tofu walnut crumb makes enough for 3-4 serves* Ingredients: Tofu walnut crumb: 150g firm tofu 1 cup ground walnuts/walnut meal 1 tbsp olive oil 1 tbsp soy sauce 1 tsp rice wine vinegar 1 tbsp sriracha Creamy broth: 1 tsp olive oil 1/4 brown onion, diced 2 garlic cloves, minced 1 + 1/2 cups water 1 tsp vegan chicken stock powder (can sub veggie stock powder) 1 tbsp white miso paste 1 cup soy milk 2 tbsp dark soy sauce Veggies: 1 zucchini 1 corn cob 1 bunch broccolini 1 tsp olive oil Pinch of salt To serve: 100g cooked ramen noodles Drizzle of sesame oil Fresh chilli Method: Preheat the oven to 180 degrees celsius, fan-forced. Line a baking tray with baking paper Crumble tofu into a large mixing bowl. Add the ground walnuts, 1 tbsp olive oil, soy sauce, rice wine vinegar and sriracha. Mix well, then transfer to the baking tray and place into the oven to bake for 25-30 minutes (tossing halfway through) Finely dice the brown onion and garlic. Place a saucepan over medium-high heat on the stove and drizzle with 1 tsp olive oil. Add the diced onion, fry for 2-3 minutes, then add the garlic, frying for a further 1-2 minutes Add the water, chicken stock powder, miso pasta, soy milk and dark soy sauce to the saucepan and mix together well. Reduce the heat to low Place a seperate small saucepan over high heat on the stove. Once the water is boiling, add the ramen noodles and cook as per packet instructions Cut the zucchini as desired and remove the corn kernels from the cob. Place a frying pan over medium-high heat on the stove and drizzle with 1 tsp olive oil. Add the corn and zucchini to the pan and fry for 3-4 minutes, before adding the broccolini with a sprinkle of salt and continuing to fry for 2-3 minutes Assemble your noodle soup. To a bowl/s, add cooked noodles, creamy broth, zucchini, corn, broccolini, tofu and walnut crumble, sesame oil and fresh chilli. Enjoy! #vegan #plantbased

HEAL ME CHICKEN SOUP🍜🐔 If you wanna cozy soup to make for the cold weather or feel like you are getting sick you gotta make this!! Ginger, garlic, and green onions all have natural anti-microbial properties and the bone broth gives you tons of support for your immune system! Ingredients: ⁃ 2 lb chicken breast ⁃ 8 cloves of garlic, sliced ⁃ 1 large piece of ginger that is peeled and sliced ⁃ 8 green onions (white part for soup, green part to top afterwards) ⁃ 6 cups of water ⁃ 4 cups of bone broth ⁃ 8-10 oz of rice noodles ⁃ 1 cup carrots ⁃ Salt and pepper Sauce: ⁃ 1/4 cup rice vinegar ⁃ 1/4 cup tamari (soy sauce) ⁃ 2 tbsp sesame oil ⁃ 1-2 tbsp of crispy chili oil (depending on how spicy you want it) Instructions: 1. Place the chicken, garlic, ginger, green onions (white), water, bone broth, salt and pepper in a large pot or dutch oven. 2. Bring to a boil and then simmer for 15-18 minutes to cook the chicken. Use a meat thermometer to make sure chicken is cooked through. 3. While the chicken is cooking, place all sauce ingredients in a small bowl and mix together and set aside. 4. Once chicken is done, take the chicken breast out and place in a large bowl. Shred with two forks. 5. After chicken is removed from the pot, add in the rice noodles and carrots to cook. This should only take around 5-6 minutes but look at the cooking instructions on the rice noodle packet. 6. Once noodles are cooked and chicken is shredded, add the chicken back to the pot and stir to combine. 7. Serve the soup in a bowl and add the tamari/vinegar sauce on top and add in the rest of the green onions. We put on a few tablespoons of the tamari sauce for an extra little kick! Chicken Noodle Soup Ingredients: - Whole uncooked roast chicken - Any vege you have on hand - I used capsicum, carrot, broccoli & celery - 1 large brown onion - 2 tablespoons ginger (I go hard with ginger & garlic when someone is sick!) - 5 garlic cloves - 2 cups chicken bone broth (for extra flavour - if you don’t have bone broth you can just add water!) - 3 cups chicken stock - Salt & pepper - Vermicelli noodles (optional) (I very much taste test & add as I go, but these are the approx measurements of all my tweaking throughout the cooking process!) This one is so easy - just dump and go for the most part! Save this recipe & enjoy as the colder weather starts creeping in 🍂 ▢ 2-3 boneless, skinless chicken breasts ▢ 2 cans cream of chicken soup, 10.5 oz each, (don't add water) ▢ 1-2 tsp dried parsley ▢ ½ tsp seasoned salt ▢ ¼ tsp poultry seasoning ▢ ¼ tsp garlic powder ▢ 1/2 stick butter, sliced ▢ 4 cups chicken broth (I use bone broth but you can use the regular kind) ▢ 8 oz. egg noodles, uncooked (these are the Mrs. Miller’s medium egg noodles) - Place chicken breasts in the bottom of the crockpot, then top with the soups (don’t add water) - sprinkle with the spices. Add butter slices to the top, and pour in all of the chicken broth. - Cook over low heat for 5-6 hours, or high heat for 2-3 hours. - Remove the chicken from the pot and shred into large chunks with two forks. - Add the shredded chicken back to the pot along with the dry egg noodles and stir. - Continue cooking for 30-45 minutes, until noodles are tender I used my @Ninja Kitchen PossibleCooker for this recipe! 🔗 ed in my LTK 🫶 #fall #winter #fallrecipes #winterrecipes #crockpotrecipes

Happy Soup Season 🍜 Crockpot Lasagna Soup 🍲✨ This one’s a lazy-day dinner that tastes like you spent hours in the kitchen 🤍 Recipe: • ½ lb lean ground beef • ½ lb Italian sausage • 1 yellow onion (chopped) • 1 tbsp olive oil • 3 cloves garlic (minced) • 2 tbsp tomato paste • 1 jar marinara sauce • 7 cups chicken broth • 9 lasagna noodles (broken into pieces) • ¼ tsp red pepper flakes • ½ tsp oregano • 1 tsp dried basil • 10 oz cottage cheese • 1 cup mozzarella • ½ cup parmesan • Optional: spinach + fresh basil How to make: 1️⃣ Brown beef + sausage with salt + pepper. Add to crockpot. 2️⃣ Add onion, garlic, tomato paste, marinara, broth + spices. 3️⃣ Cook on LOW 6–7 hrs or HIGH 3–4 hrs. 4️⃣ Stir in noodles 30 mins before serving. 5️⃣ Mix cottage cheese, mozzarella + parmesan in a bowl — top each bowl with a scoop.
