I have been making these every week! They are so light, fluffy and delicious!!! RECIPE Wet Ingredients: 3 very ripe bananas, mashed well 2 large eggs 1 teaspoon vanilla extract 2 tablespoons honey Dry Ingredients: 1¼ cups almond flour ½ cup vanilla protein powder 2 teaspoons baking powder ½ teaspoon baking soda ½ teaspoon cinnamon ¼ teaspoon salt ¼ cup (or less) chocolate chips Instructions: 1. Preheat oven to 350°F. Line or lightly grease a 12-cup muffin tin. 2. In a large bowl, mash bananas until smooth. Whisk in eggs, vanilla, and honey until combined. 3. Add all dry ingredients. Stir gently until just mixed—no overmixing. Batter will be thick (like thick cookie dough). If it’s too dry/stiff, add 1 Tbsp almond milk at a time. 4. Fold in most of the chocolate chips. 5. Scoop evenly into muffin cups (~¾ full). Top with a few extra chips. 6. Bake 18–24 minutes 7. Cool in tin 5 minutes, then transfer to a rack. #proteinmuffins #recipes #healthy #creatorsearchinsights
