tomato soup for the soul🍅 . ingredients: 4 Roma tomatoes 4 tomatoes on the vine (can do any variety of tomatoes you prefer) 1 red pepper (I didn’t have one) 2 small or 1 large onion olive oil Salt & pepper red pepper flakes, thyme, dry or fresh basil, oregano, paprika 1 head of garlic 1.5-2 cups of vegetable or chicken broth 1/2-1 cup of heavy cream / cream of choice instructions: 1. slice tomatoes, pepper if you have, & onion into quarter chunks, drizzle olive oil, salt, pepper, thyme, red pepper flakes, pinch of paprika, oregano, dried basil 2. slice top off garlic, wrap in tin foil with oil & salt 3. Bake all for 40 mins at 400 F 4. Place into blender (or hand blend) with broth (can add basil leaves - I didn’t have on hand) & blend (optional: can strain soup for thinner consistency, I kept mine thicker) 5. Return mixture to pot to simmer, add heavy cream (I used nutpods ‘original’ creamer) 7. Make your grilled cheese & enjoy!!!!
