I’ve had these egg bites every day for a month and I’m still not sick of them! Tons of flavor thanks to the turkey seasoned with taco meat. 3 of these with some potatoes and salsa is PERFECTION! These muffin pans are also the best I’ve ever used. I don’t even spray them, just add all ingredients straight in and they pop out every single time! Muffin Pan Link: https://linksta.io/dd521524 INGREDIENTS -16 ounces 93% lean ground turkey -2 tablespoons taco seasoning -1 red bell pepper (149 grams), finely chopped -1/2 a yellow onion (80 grams), finely chopped -4 grams avocado oil -320 grams egg whites -6 whole eggs -330 grams @good_culture low fat cottage cheese -2 teaspoons kosher salt -1 teaspoon black pepper DIRECTIONS 1. In a medium size pan over medium heat, cook the ground turkey in 2 grams avocado oil from a spray bottle. Season with taco seasoning. Small crumbles are best for these egg bites. Cook for 8-10 minutes until cooked through. Transfer to a bowl to cool. You should be left with around 360 grams of cooked turkey meat. 2. In the same pan, sauté the bell pepper and onion in 2g avocado oil. Season with salt and pepper. Cook for 8-10 minutes until soft. Set aside. 3. In a blender, combine the egg whites, eggs, cottage cheese, salt and pepper. Blend until smooth. 4. In 2 silicone muffin pans (24 muffins total), divide the turkey taco meat (about 15g per cup, a very hefty tablespoon full), the bell pepper + onion mixture (a scant tablespoon, about 11g) and the egg mixture (will fill almost to the top). 5. Bake at 375°F for 22-25 minutes until the eggs are set. Cool, and then push the bottom of the silicone muffin pan to pop each one out. 6. Will store in an airtight container in the refrigerator for 1 week, or freeze for at least a year. 7. You can enjoy warm from the oven, cold from the fridge, reheat in the air fryer for about 4 minutes at 390ºF, or microwave for 1 minute. TIME SAVING TIP We make turkey tacos every single Tuesday. I double my taco meat and veggies, then use the leftovers to make these. Huge time saver!
