Posting another delicious #SoupSunday recipe 🥣✨ This one’s been in my rotation for years, it’s hearty, low-carb, and seriously tastes like comfort in a bowl. Shoutout to @stay_snatched for the OG recipe 🤍 Keto Zuppa Toscana (Cauliflower Kale Sausage Soup) Ingredients: 1 lb Italian sausage (I use mild) 3 slices bacon, chopped 1 cup onion, chopped 3 garlic cloves, chopped 1 head fresh cauliflower, chopped 5 cups low-sodium chicken broth 1 tsp dried oregano Salt + pepper to taste 1 cup heavy whipping cream 3 cups fresh kale, stems removed Parmesan for topping (optional) Instructions: In a large pot or Dutch oven, cook sausage + bacon on medium-high until browned. Add onions, cook 2–3 minutes until translucent. Stir in garlic, chicken broth, cauliflower, and oregano. Cover + simmer 15 mins, until cauliflower softens.
