these freezer friendly loaded breakfast burritos will be the best part of your mornings! 🌯💛 🌯 FREEZER BREAKFAST BURRITOS (makes ~20) INGREDIENTS 1 bag frozen shredded hash browns 1 bell pepper, diced 1 large onion, diced Olive oil Salt, pepper & garlic powder (to taste) 1 package plant-based taco "beef" (prepared per package directions) mine is from @rollingreens! or regular ground beef + taco spice seasoning 1 can black beans, drained & rinsed Liquid egg whites (enough to generously coat the pan) 20 burrito-size tortillas INSTRUCTIONS 1. Preheat oven to 350°F. 2. On a large sheet pan, add hash browns, peppers & onion. Drizzle with olive oil and season with salt, pepper & garlic powder. 3. Bake until golden and tender, about 25-30 minutes. 4. While veggies cook, prepare the plant-based taco mix (or pan fry ground been and season with taco spice). Stir in black beans once done. 5. Remove veggies from oven and evenly spread the taco mixture over the pan. 6. Pour liquid egg whites over everything until just covered. 7. Return to oven and bake until egg whites are fully set, about 10-15 minutes. 8. Cut filling into portions and add to tortillas, roll into burritos, wrap tightly, and freeze! TO REHEAT: Microwave, panini press or toaster oven until heated through (unwrap first).
