I’ll do anything to save time cooking and cleaning. Also, I love uniformly thin chicken. I would typically butterfly my chicken breasts first — but we needed a good demo and it was grilled and cut down for pasta anyway. Best cooking hack I have come across in a long time! Make sure to give it a really light hand at first — this is sped up 3x — if you go slamming it down you might just disintegrate it, especially if you’re starting with thin cutlets. I buy high quality chicken — so additional tenderizing isn’t generally my concern (we are looking at you Costco organic chicken, I have never bought chicken with a worst texture). So keep that in mind that if that’s your goal it’s a little different than the mallet! Instructions: Add baking soda and coarse salt to the entire board. Take half a lemon a squeeze the juice onto the board activating the baking soda resulting in a cleaning paste. Use the lemon rind to scrub the board thoroughly into all the nooks and crannies. Let sit for 20-30 minutes to work its magic. Rinse off and pat dry. Lastly, add coconut oil to the board and lather it up! Iranians have a quintessential Norooz tradition where we decorate a Haft-Seen table.
