PHILLY PEPPERS 🫑 You’ll need: 🫑 4 Large Bell Peppers Cut in Half 🫒 3 TB Olive Oil 🧂 Salt & Pepper 🧅 1 Medium Onion Sliced 🍄🟫 8oz Sliced Mushrooms 🥩 14oz Thinly Sliced Beef 🧀 8 Slices Provolone Cheese To make: 1️⃣ Preheat oven to 350 degrees. Arrange bell peppers on a casserole dish and top with 1 tbsp olive oil and sprinkle with salt and pepper. Bake for 15 minutes! 2️⃣ Heat 1 tbsp of olive oil in a large skillet over medium high heat. Add in onions and saute for 4-5 minutes or until the onions softened. 3️⃣ Add in mushrooms and cook for 3-4 minutes, or until golden brown and crispy. Remove from the pan and set aside. 4️⃣ To the same pan add the remaining tbsp of oil. Add in the sliced beef and cook until no longer pink. 5️⃣ Add the mushrooms and onions back to the pan. Season with salt and pepper to taste. 6️⃣ Stuff peppers with the beef mixture and top with provolone cheese. 7️⃣ Bake for 10 minutes or until the cheese is melty and the peppers are tender. I call it the piggy back method and it’s totally changed the way I prepare food for my family, grocery shop, and pack for hockey tournament weekends so we don’t eat out!! Here’s how I do it: Instead of going to grocery store and throwing a bunch of stuff in the cart that will likely not all get eaten. I have a checklist! The checklist has all the ingredients I need to cook for the week I also plan my meals for the week (and weekends if away) so multiple ingredients I buy get turned into multiple meals. For example I might buy ground beef - that might become taco soup —-> Asian bolognese —> what’s left nachos Or sausage that might become sausage protein balls — Tator tot casserole I put together a months worth of easy recipes, my tournament weekend checklists, grocery shopping lists, and so much more in the hockey mom survival kit! Tuscan Chicken Casserole~One Pan Dinner! Easy weeknight comfort food dish. Definitely a “marry me chicken” recipe. You can also use chicken thighs if you wish. Ingredients: 2 large chicken breasts butterflied and cut horizontally to yield 4 thinner fillets 4 ounces of cream cheese softened to room temperature 3/4 cup of heavy cream 4 cloves of garlic finely minced 1/2 teaspoon of onion powder, 1/2 teaspoon of paprika, and 1 teaspoon of Italian seasoning mixed together 1/4 cup of Parmesan cheese freshly grated 3/4 cup of mozzarella cheese divided 8 ounces of sun-dried tomatoes well-drained and finely chopped (reserve the oil) 3/4 cup of fresh spinach coarsely chopped Fresh ground pepper Kosher salt to taste Directions: Preheat the oven to 400°F In a mixing bowl, combine the softened cream cheese with the heavy cream. Add the minced garlic. Add paprika, onion powder, and Italian seasoning mixture. Add the Parmesean cheese. Add half of the divided mozzarella cheese. Stir well to combine all of the ingredients and set aside. Arrange the salt and peppered fillets in a single layer in a baking dish. Evenly spread the cream cheese mixture over the chicken fillets. Drizzle approximately one tablespoon of the reserved oil from the sun-dried tomatoes over the mixture. Scatter the chopped sun-dried tomatoes evenly around the dish. Cover the baking dish loosely with aluminum foil to retain moisture and prevent the surface from burning. Place the dish in the preheated oven and bake for 20 minutes. Remove the dish from the oven, and carefully uncover it. Stir the coarsely chopped spinach into the sauce around the chicken and sprinkle the remaining mozzarella cheese over the top. Return the baking dish into the oven uncovered and continue to bake for an additional 10 minutes. Balsamic roasted brussel sprouts are my absolute favorite and this dish is perfect for Thanksgiving or Friendsgiving ✨ I halved 3 bags of brussel sprouts, added pepper and salt along with garlic powder and some olive oil. After mixing throughly I cooked on my air fryer for 12 mins at 385 degrees. While these cooked I mixed Balsamic Vinaigrette, honey, and pepper flakes.
