I used to things omelettes were quite boring but it really is down to toppings and how creative you want to be. This one has the addition of crispy carrots for an insanely delicious breakfast, try it and you won’t be disappointed 😏 Here are the ingredients you will need: - 1/2 grated carrot - 2 eggs - Grated cheese - ham slices Method: 1. Over a medium heat frying pan add some olive oil, once hot sprinkle the grated carrot 2. Meanwhile whisk your eggs and season to taste 3. Once the carrot is starting to crispen up add the eggs making sure to coat the whole bottom of the pan 4. Shoutout to @stay_snatched for the OG recipe 🤍 Keto Zuppa Toscana (Cauliflower Kale Sausage Soup) Ingredients: 1 lb Italian sausage (I use mild) 3 slices bacon, chopped 1 cup onion, chopped 3 garlic cloves, chopped 1 head fresh cauliflower, chopped 5 cups low-sodium chicken broth 1 tsp dried oregano Salt + pepper to taste 1 cup heavy whipping cream 3 cups fresh kale, stems removed Parmesan for topping (optional) Instructions: In a large pot or Dutch oven, cook sausage + bacon on medium-high until browned. Add onions, cook 2–3 minutes until translucent. Stir in garlic, chicken broth, cauliflower, and oregano. Cover + simmer 15 mins, until cauliflower softens.
